Raspberry Jalapeno Glaze
PREP TIME: 40 minutes
Makes: 4 cups

COMMENT:
Use as a finishing touch to your grilled or broiled kabobs to give them a sweet finish. Don't put in to too early as the sugar can quickly caramelize or burn.

INGREDIENTS:

  • 1 cup fresh or frozen raspberry
  • 1 cup apple cider vinegar
  • 1/4 cup fresh jalapenos, finely minced
  • 1/4 cup soy sauce
  • 4 cups sugar
  • 1 cup raspberry/cranberry juice cocktail

METHOD:
In a 3-quart non-reactive, heavy-bottomed sauce pot, add all ingredients and cook over medium-high heat until the sugar has melted and the sauce has reduced to 4 cups and coats the back of a spoon, about 20 - 30 minutes. Serve with kabobs of your choice.
