Ingredients:
- 1 pound shrimp, peeled and deveined
- ½ cup fresh asparagus, cut into1-inch pieces
- ½ cup sliced fresh mushrooms
- ¼ cup sliced green onions
- ¼ cup diced green bell peppers
- ¼ cup diced red bell peppers
- 2 cloves minced garlic
- 1 (10¾-ounce) can cream of celery soup
- ¾ tsp dried thyme
- salt and black pepper to taste
- ¼ tsp cayenne pepper
Method:
Preheat oven to 375°F. Coat a 2-quart baking dish with nonstick
cooking spray. Combine soup, shrimp, asparagus, mushrooms, green
onions, bell peppers, garlic and thyme in a large bowl. Season with
salt and peppers. Mix well. Place in prepared baking dish. Cover
and bake 30 minutes. Serve over hot rice if desired.
