CREAMY SHRIMP & VEGETABLE CASSEROLE

Ingredients:

  • 1 pound shrimp, peeled and deveined
  • ½ cup fresh asparagus, cut into1-inch pieces
  • ½ cup sliced fresh mushrooms
  • ¼ cup sliced green onions
  • ¼ cup diced green bell peppers
  • ¼ cup diced red bell peppers
  • 2 cloves minced garlic
  • 1 (10¾-ounce) can cream of celery soup
  • ¾ tsp dried thyme
  • salt and black pepper to taste
  • ¼ tsp cayenne pepper

Method:
Preheat oven to 375°F. Coat a 2-quart baking dish with nonstick cooking spray. Combine soup, shrimp, asparagus, mushrooms, green onions, bell peppers, garlic and thyme in a large bowl. Season with salt and peppers. Mix well. Place in prepared baking dish. Cover and bake 30 minutes. Serve over hot rice if desired.
