EASY GRILLED WILD DUCK

Comment:
Just as this recipe’s name indicates, this is a simple dish with great flavor. The orange juice in the marinade is a great tenderizer, and when removed from the liquid, the duck strips cook quickly and with great grilled flavor.

Ingredients:
4 boneless, skinless duck breasts
½ cup olive oil
2 tbsps soy sauce
2 tbsps Worcestershire sauce
juice of 1 orange
1 tsp brown sugar
salt and black pepper to taste
granulated garlic to taste
1 tbsp chopped tarragon

Method:
In a large mixing bowl, combine olive oil, soy sauce, Worcestershire and orange juice. Place duck breast pieces in the marinade, cover and refrigerate 1–2 hours. Prepare a charcoal grill for high heat. Remove duck from marinade, wipe off excess and season well using brown sugar, salt, pepper, granulated garlic and tarragon. Grill duck breasts over charcoal fire for 6–7 minutes on each side for medium-rare. Serve over a salad or slice and serve as an hors d’oeuvre.
