Butter was first “churned” in prehistoric days with a simple herdsman trying to carry milk on a journey. As he walked, the milk sloshed in the pouch he carried, which was fashioned from animal stomach. Upon reaching his destination, he discovered that the milk had divided into fat (or butter) and whey (or buttermilk). Thankfully, butter has graced mankind’s table ever since. Because butter was plentiful in medieval Europe, it was deemed fit only for the peasants. Aristocratic sentiment changed by the 19th century with the development of classical French cuisine…cooking founded on the use of butter.
