Chef John Folse

With its namesake known around the globe as Louisiana’s Ambassador to the world, the Chef John Folse Culinary Institute at Nicholls State University is dedicated to the preservation of Louisiana’s rich culinary heritage while fostering Louisiana’s role as a culinary leader. Chef John Folse, Past President and Chairman of the Board of the American Culinary Federation, represents the finest in culinary professionalism. Rienzi-Levert Plantation

Historic Rienzi Plantation was donated to the Chef John Folse Culinary Institute by the J.B. Levert Land Company. The Institute is an academic college of Nicholls State University offering both an Associate of Science and a Bachelor of Science degree in Culinary Arts. These degree programs provide an opportunity for students to develop-in-depth knowledge of the culinary field that is strengthened and supported by a foundation of general learning. The Institute prepares students to be culinary professionals of the highest caliber.

Ruth U. Fertel Culinary Art Building

The Chef John Folse Culinary Institute at Nicholls State University plans to expand with the construction of the Ruth U. Fertel Culinary Arts Building.
The new building will be named for the Ruth's Chris Steak House founder who died in April 2002 after committing $600,000 from the Fertel Foundation to endow the anchor building at the Chef John Folse Culinary Institute. A fundraising dinner brought in an additional $400,000, bringing the Fertels' total commitment to $1 million. In 1999, Fertel was recognized by the Institute for her development of Ruth's Chris, which has grown from one restaurant in 1965 to 23 company-owned and 43 franchised restaurants located from coast to coast and internationally.
The new building is still in planning, but will include a student-operated restaurant, six kitchens, a commissary, an auditorium, a computer lab and several classrooms. The historic Rienzi-Levert home will house offices and provide accommodations for receptions and other special events. The new facility will allow the Institute to be competitive in attracting and training students and faculty of the highest quality. The Levert campus will also provide space for future growth of the Institute.
